Finally, Another Food Post {Roasted Tomato Bisque + Grilled Cheese}
In the beginning of my foodie journey with hubs, we aspirationally watched a lot of Food Network but tried very little, until we found the Sandwich King, AKA Jeff Mauro, and he gave the simplest but most brilliant and easy-to-do recommendation: use different cheese in your grilled cheese! I don't think my husband even knew that you didn't have to buy Kraft Singles.
So, anyway, the episode of Sandwich King that Jeff Mauro did on grilled cheese, he made a roasted tomato bisque that is pretty much the perfect thing, especially if you're like us and have barely left your house because it's so cold outside.
What makes it especially tasty is the way you roast the veg (carrots, tomatoes, and shallots tossed with brown sugar and olive oil) before you mix it with the stock and cream. It's delicious but you're still basically eating a bowl of vegetables. You GO, Glen Coco.
We don't really do anything different on this recipe, so I'm just linking it over and over in hopes you will soon find joy after clicking it and trying for yourself. Maybe cut the crushed red pepper amount down if you can't take much spice. I do tend to buy these Hunt's tomatoes with basil for every recipe that calls for diced or crushed tomatoes, though, because, why not already have an ingredient added, right?

You need an immersion blender or else you have to pour it all out and blend it somehow, but immersion blenders usually come with like, ten other attachments so you could use it in place of a whisk, grater, and food processor in my case.The other main ingredient you need for this meal is a husband who is a grilled cheese genius and pretty much gets the perfect melty cheese to toasted bread ratio. These are not sold it stores, #sorrynotsorry.
I actually didn't even really pose or set up my food that well for photos because I didn't expect to blog this until a lot of people on social meeds asked me about it... so normally, it's also nice to do a little sprinkle of parm on top and a sprig of fresh basil. But it hit the spot and provided plenty of leftovers for the next freezing-my-ass-off day.
